Hit The Water 11/06/20

It’s days later and as of this morning, there’s still no final call on the Presidential election (nor some of the other races).  Because the race is so close, there will definitely be recounts.  Who knows when we’ll get the final, really, truly results?  But later this afternoon, the Associated Press gave the election to Joe Biden.  It’s so very close though, if they do recounts, anything could happen.  This election sort of reminds me of a sports game (pick whichever two-team sport you like 😊).  Both sides pray for a win, but only one will be victorious.  Does that mean God likes one over the other?  No.  But we have faith that whatever the outcome, God is in control and it serves His purpose, which is beyond our understanding.  Here are a few verses to remind us of Who’s actually in control.

I know that You can do all things; no purpose of Yours can be thwarted.  ~ Job 42:2

We drug out our kayak today!  It’s been a really long time!  It’s been long enough that our arms were out of condition, which was very surprising since we did all that moving while we were home. But what a gorgeous day for a paddle!  And scenery that’s different than leaves and trees.

We stopped and ate lunch on one of the several islands.  Very serene!  There were a few speed boats (fishermen?) who zoomed by, but they were on the other side of the water from us.  Fun to watch, but not disruptive. The only problem we had was getting back into the water.  While the island looks rocky (and much of it is), down by the shore, it’s mud with a pebble layer covering it.  I was over-the-ankle deep in mud as we maneuvered the kayak off the bank.  We both had mud-soaked water shoes!  Even though we drug our feet in the water to try to clean it off, by the time we got home and took off our shoes, our feet were still covered in mud – and stones.  😊

After we returned home, we heard from the people fixing our technical issues who told us the picture issue was fixed.  It was not.  So we emailed them to let them know.  They also told us that the upgrade we couldn’t manage to do, they were unable to manage as well.  Made us feel good!  😊  We did a live chat with our “web administrator”(?)  At least we think that’s what they’re called.  Anyway, whatever their official title, they did the update in about 4-5 minutes.  So now all we need is the picture fix, and we’re good to go again!

Crab cakes for dinner!  I bought a can of lump crab meat from Giant Eagle when we were home.  I balked a little at the $20 price tag, but we ended up with two dinners and a lunch of the gumbo, plus two dinners of crab cakes, so that comes out to only $4/person.  Not bad at all!  And wonderful meals!

To end our day, there were paragliders soaring over the campground as sunset approached!  How fun!

CRAB CAKES

2 C. real crab meat                   

1 egg                                                      

1/3 C. mayonnaise                                   

¾ C. bread crumbs – ADD LAST

½ t. black pepper

1/8 t. cayenne pepper

½ t. dry mustard

1 t. Worcestershire sauce

Place crab meat in a large bowl.  Add egg, mayonnaise, mustard, peppers and Worcestershire sauce.  Mix gently.  Add crumbs and mix again.  Shape into 4 large or 8 small patties.

Heat about 1” of oil in a large skillet over medium heat.  When hot, fry crab cakes about 1 ½ – 2 minutes per side, until cooked through and golden brown.  Drain on paper towels.  (If using an electric skillet, set temperature to 300⁰.)

Serves 4

HINT:  I’ve tried several different crab cake recipes, but I always come back to this one.  No more experimenting for me.  This one’s the best!
