With our friends on their way back to Ohio, we used the day to recuperate a bit and rest up for the beginning of our anticipated, rain-free, three-day adventure. It was foggy when we got up, and the fog lifted shortly, but the clouds and intermittent rain continued throughout the day.
There’s a large group here, presumably for a rally or something and it seemed they were having a pot luck dinner. We weren’t invited. ☹
So I made comfort food today for the two of us (their loss) – chocolate cake, meatloaf and real mashed potatoes! The meatloaf is a family recipe from my Mom (which I have modified a tad over the years). And here’s a tidbit for you . . . it was the first meal I made for Blaine when we were dating. He loved it so much, he wanted the recipe for his mom. Well, she made it, and he told me that no one else in his family of 6 liked it. I don’t understand that!
I guess I picked the right brother to date. 😊
Below is the recipe:
SWEET AND SOUR MEATLOAF
1 # hamburger
6 slices any bread, chopped very small (diced or smaller)
1 egg
½ C. water
1/3 C. onion, diced
Mix well together, form into loaf shape and place in 9 x 9 pan.
Sauce:
1 C. brown sugar
1 ½ C. ketchup
½ C. vinegar
3 t. dry mustard
Preheat oven to 350 degrees.
Mix sauce ingredients well and pour over meatloaf.
Bake for 1 hour.
Serves 4
