We’ve decided it must be a requirement to own and use an ATV around here.  They run through the campground, up and down forest roads and also the main roads.  Today’s hike took us past some nice homes on a main thoroughfare and very noisy ATVs were zipping up and down the road – seemingly much faster than the 25mph limit.  There’s no way we’d own a home around here or stay in this campground in the summer – – there’d be even more traffic!

Today’s hike was through the woods, up and back down a mountain (which was more like a hill compared to what we’ve been doing 😊), over to a lake, through a wooded field that elk seem to enjoy visiting, beside a golf course and up and down the sidewalks of a couple of neighborhoods.  Pretty diverse!

Blaine’s information on this hike said to open up an app and just follow it. So that’s what we did. Good thing it worked, because there was no trail!
We felt like we were walking through these people’s back yard.
Eventually, we came out onto this dirt road that went between a golf course and expensive houses.

And in the middle of it all, we attended our first virtual birthday party!  Our nephew, Logan (the one I made the video for) turned 15 today, and since they couldn’t have an in-person party for him, we all showed up via Skype.  There were some technical difficulties, but Blaine and I were able to say ‘hi’, not only to Logan, but also to my mom, brother and sister-in-law, my cousins in Virginia and our oldest son Chris and his boys.

My cousin took some pictures of her laptop to commemorate the occasion.  None of us look like we’re having fun.  Lol!!  It’s because we were all concentrating on our devices – we only had Blaine’s cell phone and so did our son. 

At the appointed time, we happened to be standing in front of someone’s house, so we didn’t stay for the full hour the party went on.  But what time we spent; it was fun to see everyone!

Lasagna for dinner! Yum! Yum!! Yum!!!

LASAGNA

1/2 # hamburger

2 links Italian sausage

2 T. olive oil

1/3 c. onion, diced

3 cloves garlic, minced

1 (14oz.) can diced tomatoes

2 beef bouillon cubes (or 2 t. granules)

½ t. dried basil

½ t. dried oregano

1 T. parsley

2 t. sugar

1 jar Ragu (Roasted Garlic is my preference)

9 lasagna noodles

1 small Ricotta cheese

2 C. shredded mozzarella

8 oz. fresh mozzarella, sliced thin then cubed (or shredded equivalent)

Parmesan cheese

Remove casings from sausage.  Mash one link up like hamburger and cut the other into pieces.  Brown the hamburger and mashed sausage.  Remove from pan.  Brown the sausage chunks and onion.

Add garlic and sauté for just a few seconds.  Add tomatoes, tomato sauce, bouillon, basil, oregano, parsley, sugar and Ragu.  Stir well.  Simmer over low heat for 30 minutes, stirring occasionally.  (makes about 8 cups)

Preheat oven to 350 degrees.

Prepare pasta as directed and drain.  Cover bottom of a 9 x 13 pan with a thin layer of sauce.  Lay 3 noodles side by side over the sauce.  Drop or spread 1/3 of the ricotta over the noodles.  Add mozzarella and sprinkle Parmesan over the ricotta.  Cover with sauce.  Repeat layers ending with cheese.  Sprinkle generously with parmesan cheese.

Bake, uncovered for about 30 minutes or until heated thru and the cheese on top is turning brown. (in our humble opinion, that’s the best-tasting part!)
