It’s Mother’s Day! 05/10/20

What an unusual Mother’s Day.  It’s the first time we weren’t home to celebrate with our family.  ☹

I received my first ‘Happy’ wishes at 5:30 this morning from a friend who’s not even a mom.  So sweet!

Then, one of our sons sent a text this morning that said I had a gift card at Amazon.  I tapped on it and it took me to Amazon’s site where I was told to add the gift card to our account.  Once I did that, it gave me an option to type a message for them.  I did.  And it sent it to them in a text.  Pretty strange, but pretty cool and amazing to me at the same time.

While Blaine prepared his signature waffles and strawberries, I talked with my mom.  Then after breakfast, Blaine cleaned up the kitchen, and I received a FaceTime request from the aforementioned son and family, so we had a nice chat with them.

All the while, I was sending and receiving texts to and from other moms I know.

We tried in vain to connect with our home church for this morning’s service, but with poor Internet and other technical difficulties, we were not successful.

Wanting to get out – at least for a bit – we rode our bikes to the cemetery here in the State Park.  Sadly, it’s really not much, and what’s there, for the most part, is no longer tended to.

This is the largest ant work we’ve seen, and we’ve seen a LOT.
They carry all these tiny stones out of the ground and drop them above ground around their hole. And they were still super busy today! Wonder what it looks like underground??
If you’re really good, this name may sound familiar to you.
It’s the family name that was on the information board about the cemetery, that was posted the other day. : )

We rode on, and stopped to walk a trail, then visited the lake once again.  A nice, fairly leisurely time out in the fresh, albeit warming quickly, air.

Well, truthfully, he didn’t think for more than a second. : )

These are the bushes we were walking through today. They lined the trail on both sides of us; so close, our legs usually brushed them. Figured I should have at least one picture. : )

Even more peaceful than yesterday, because hardly anyone was there.

Apparently, under normal circumstances, they have bonfires and chuckwagon meals here,
along with the opportunity to ride. But not now, thanks to ‘Rona’.

Back home, we again fought with the internet (Extreeeeeemly slow service!  People must be staying in and streaming movies for Mother’s Day!), managed to post May 6th and a special Mother’s Day edition, but unfortunately, that’s about as far as we got.

And Blaine made dinner!  Swiss steak, mashed potatoes and salad.  Yum- – meeee!

The grocery store didn’t have round steak, so we bought this instead. It was really good! But we had to drastically cut down on the cooking time. We only did about 30 minutes instead of 2 hours!
That’s okay. We can eat anytime. : )

And our other son called and chatted for a few minutes.

And it does rain in Arizona!  We went for a short walk around the campground loops after Blaine washed the dishes (isn’t he great??), and just as we got back, we heard thunder!  Never saw any lightning, but we saw the rain coming!  Great torrents of rain! (We have not seen a raindrop for over a month!) But other than a few drops, it skirted around us.  We just sat and watched and inhaled the scent of fresh rain for a while.  Wonderful!

We learned that they only bloom for five days. How sad! : (

A very nice Mother’s Day, even though we weren’t at home.

SWISS STEAK

2 pounds tenderized round steak

¼ C. flour

¾ t. salt

½ t. pepper

3 T. butter

1 large can stewed tomatoes

1 small can tomato juice

Preheat an electric skillet to 325 degrees. 

Trim any excess fat from the steak and cut into serving size pieces (3-4 pieces) Mix flour, salt and pepper in a large plastic bag.  Add the steak pieces and shake to coat, pressing the flour into the steak before removing.  Melt the butter in the skillet.  When it’s hot, add the meat and brown on both sides.  Add the tomatoes and juice, cover and cook for about 2 hours, or until tender. 

Serves 4-6

HINT:  Can also be made in the crock pot.  Just brown, cover with tomatoes and juice and cook on low for 7-8 hours.
