My goal was to get completely caught up today. I didn’t quite make it. I won some battles, but lost the war. And as I sat chained to my laptop, Blaine made breakfast and dinner! Pancakes, sausage and blueberries and for dinner, the most wonderful bbq ribs! Of course, there was also dessert, which he also made. And we did precious little to earn all those calories we ate!
Here’s a little tidbit related to Independence Day. It was in our Daily Guidepost devotional this morning:
John Adams and Thomas Jefferson, the only signers of the Declaration of Independence to become presidents of the United States, died within five hours of each other on July 4, 1826. Five years later, the next former US president to die was James Monroe, who also passed away on July 4th in 1831.
And in case you don’t remember from previous July 4th posts, July 4, 1776 is the day we declared our independence from Great Britain. The war wasn’t over until much later. The Treaty of Paris was signed on September 3, 1783, but the British didn’t leave the area until December. And even then, hostilities between the two countries continued for over 12 years. And if you remember, the War of 1812 was between Britain and the US also. In other words, things did not end entirely peacefully for quite some time.
There sure was a lot of boating going on today!
We asked around. Each of our neighbors asked around. Apparently, there are no patriotic celebrations going on today – anywhere. No parades, no fireworks, no campground picnics, nothing. We did hear and see a couple of large ones off it the distance, and determined they were probably someone’s personal display. There were too many pauses to be professionally done.
RIBS
1 full slab baby back ribs
1T. paprika
2T. Kosher salt
1T. dry mustard
½ t. cayenne pepper
½ t. black pepper
Place ribs in 9×9 stone. Cover tightly with heavy duty foil.
Bake 1 ½ hours at 250 degrees, then 1 hour at 350 degrees.
Remove from pan and grill. Baste with BBQ sauce.
CHOCOLATE CARAMEL FANTASY
2 rows Oreos (cream removed), crushed
1/3 C. butter, melted
30 Kraft vanilla caramels (other brands don’t work as well)
¼ C. caramel ice cream topping
1/2 C. heavy whipping cream – DIVIDED
2 C. chopped pecans
¾ C. chocolate chips
Preheat oven to 350 degrees.
In a medium mixing bowl, stir together crumbs and melted butter. Press onto the bottom of a 9” springform pan. Bake 10 minutes. Cool slightly.
In a medium saucepan over low heat, melt caramels in ice cream topping, stirring often. Stir in the first ¼ C. cream. Remove from heat, stir in nuts. Spread over crust.
Cool, cover and chill for 1 hour. In small saucepan, melt chocolate, remove from heat, stir in remaining cream. Drizzle or spread over pie. Cover and chill for at least 1 hour.
