Boudin And Cracklin’ 12/13/19

Any guesses as to what a ‘boudin’ is?  Or a ‘cracklin’’?

First, I can tell you that they’re both a really big deal around these parts.  There are billboards and signs and ads and contests. 

Just one of at least a half dozen different ones we saw in this area.

And everyone says they have the best.  Our choice?  We went to Don’s.  Yes.  Don’s.  The same place we had dinner last night, only it’s not.  It’s the same company, but not the restaurant.  It’s a market.

And today we caved to all the boasts and bought our own.

So what are they?

Boudin (BOO-dan).  According to the Culinary Dictionary I posted the other day, it’s “a Cajun smoked sausage containing rice and (typically) pork.  And you can get some at the Scott Boudin Festival in April”.  But it’s not April, so we had to buy ours at Don’s Market.  We were planning on grilling it like brats, but the directions they gave us are explicit, so at least for the first time (we bought enough for two meals – I sure hope we like it!), we plan on making it the way they said.  It’s tomorrow night’s dinner.  Tonight, we feast on spaghetti and those Jim n’ Nick’s muffins I’ve been wanting to try.  I had to give up on the mini muffin pans.  No one.  And I mean NO one sells the minis, but Blaine put some in our Amazon cart, which we’ll have shipped to Ohio.  But only if they turn out well tonight.

Sorry.  I’m rambling.

Cracklin’  (CRACK-lin).  The dictionary says “The crisp residue left after the rendering of lard from fat or the frying or roasting of the skin (pig)”.  Not something we would normally eat, but when in Rome . . .

So we bought some.  $19.99/pound!  Good thing we just wanted a taste!  I don’t know how people can afford to buy these things!  They’re smothered in seasoning, but it wasn’t too spicy.  The comedian they had at the show last night made a joke about them – “You know they’re good if the brown paper bag is greasy.”  And then he said something about the grease being good for chapped lips.  😊

I ate some, but wouldn’t try them again, but Blaine said he would.

The boudin, however was wonderful!  As you’ll learn about tomorrow. 

And the muffins?  They tasted just as awesomely wonderful as we remembered them – only much, much larger.  😊  So it’s safe for you to give them a try.  Don’t forget the honey butter!  It’s a necessary evil!

They gave us a card with the cooking directions on it.

This afternoon, we installed our new sunscreen for our windshield. We ordered it back in September at the RV show in Hershey, and had them ship it to Blaine’s Mom and Dad’s so we could pick it up in October.  It took about an hour to install.  We had 10 majorly strong magnets that secure to the inside of the windshield with special adhesive, and there are 10 little pockets on the screen itself that contain magnets.  When you want to use the screen, you grab the pole they give you and stick the magnets together.  Voila!  A see-through screen to keep the heat out!  We’re gonna need it out West.

Other than beginning to prepare for our trip home, that’s how we spent our Friday, the 13th.  What’d you do?
