Two Days Of Preparation 12/19-20/19

She will give birth to a son, and you are to give Him the name Jesus, because He will save His people from their sins.”  All this took place to fulfill what the Lord had said through the prophet (Isaiah 7:14): “The virgin will conceive and give birth to a son, and they will call Hi Immanuel”(which means “God with us”).  ~ Matthew 1:21-23

We spent the next two days helping my mom prepare for the invasion.

My mom is the BEST package wrapper! So creative! This year, she determined that her “theme” would be trees, so every gift was wrapped in some type of tree paper. : )

Twenty-two and a half (1/2 being baby Cooper 😊) were about to descend upon my mother’s bungalow beginning Friday, the 20th.  There was much work to be done to make room for them all.  But by the end of Friday, we felt we’d been successful! 

On Thursday, I put ’em to work icing Cream Wafers. We also baked Almond Cresents.

Late Friday morning brought my cousin Ed and his wife, Kerri, their two kids, Tyler and Emilie, and their little dog, Sushi.

That dog is a baby. I think she spends more time on people than on the ground. : )

And later that evening, just in time for pizza (thanks Ed & Kerri!), my brother Lance, wife Kelli, and son Logan came to help out. Many hands make light work!

We even covered part of the ceiling. : )

The table is set! We had to set up a card table just to the left, where 5 people will sit.

Tomorrow will either confirm, or deny that theory.

ALMOND CRESENTS

1 C. butter, softened

1/3 C. sugar

2/3 C. almonds, ground and blanched

¼ t. almond extract

Mix together well.

1 2/3 C. sifted flour

¼ t. salt

Mix these two ingredients together and then work into the other mixture well, using your hands.  Chill the dough.

Preheat oven to 325 degrees.

Roll dough into manageable ropes about as thick as a pencil.  Cut into 2 ½” lengths.  Form into crescent shape and place on ungreased cookie sheets. 

Bake for 14-16 minutes until set, but not brown.  Cool on the cookie sheet. 

While still slightly warm, carefully cover each cookie in 1 C. sifted powdered sugar mixed with 1 t. cinnamon (or a little more cinnamon if you prefer).

CREAM WAFERS

1 C. butter, softened

1/3 C. heavy cream

2 C. flour, sifted

Mix together and chill 2 hours or overnight.  

Preheat oven to 375 degrees.

Roll small amounts of chilled dough at a time (keeping remaining dough refrigerated)    1/8” thick on lightly floured surface.  Cut with SMALL cookie cutters.  Cover both sides of cut out cookie with sugar.

Place on cookie sheet covered with parchment paper, or lightly greased.  (be sure to place cookies in pairs by placing them opposite on the sheet – when filling, the bottoms will go together to form a sandwich)  Prick all over with sharp-tined fork.  

If you want to decorate your cookies, use decorator sugars after pricking and before baking. You can also decorate by adding a few drops of food coloring to the filling.

Bake for 7-9 minutes. 

Carefully remove from baking sheets and cool completely. 

Filling:

1/2 C. butter, softened

1 1/2 C. powdered sugar, sifted

2 egg yolks

2 t. vanilla

Blend together.  Spread thickly on frozen cookies to form sandwiches.

HINT:  I highly recommend that you freeze the cookies completely before filling to avoid breaking.
