After they had been in custody for some time, each of (them-the cupbearer and the baker)… had a dream the same night, and each dream had a meaning of its own. ~ Genesis 40:4b-5     And now the sequence of events continue to fall into place.  If God hadn’t given Joseph the gift of dream interpretation…if Joseph’s brothers hadn’t sold him into slavery…if the Midianites hadn’t connected with Potiphar at the right time…if Potiphar hadn’t entrusted Joseph with his affairs…if Mrs. Potiphar hadn’t accused Joseph…if Potiphar hadn’t put Joseph in his prison…if the warden hadn’t entrusted Joseph with his affairs…if Pharaoh hadn’t become offended with his cupbearer and baker…if Potiphar hadn’t assigned these two men to be under Joseph’s care…if a thousand unseen things hadn’t happened…   And so it goes.  God so carefully arranged each event in Joseph’s life – using both good and bad (in our humble opinion) – to bring about the salvation of His people.  Such a wonderful reminder to us!  How blessed we are to serve a God Who cares so much and so perfectly!  How amazing He is!

Valentine’s Day!  It’s a good day to think about how much our Heavenly Father Loves us, and what we can do to show our love for Him!  And of course, to appreciate all our loved ones!

My wonderful husband somehow found red tissue paper and cut out hearts and wrote loving phrases on them.  How special is that?!?  I didn’t display my love for him quite the same way.  I cook.  😊  A great breakfast, and then dinner. 

I’m sorry to say that we didn’t contribute to the $24,000,000,000.00 spent this year.  And yes, all those zeros add up to the “b” word!

In between meals, we went riding again, looking for Nutria mostly, but also I wanted a picture that showed the water marks on the trees so I could add it to the observatory post from two days ago.  When we were out at sunset the other day, we could see it really well, but we didn’t think to take a picture then.  Mostly because we didn’t know for certain what it was.  We also hiked one of only two places we haven’t been this week.  It was a short loop trail.  The only place remaining after today, is their prairie loop trail, which just circles some brown grass.  We’d rather ride and search for critters along the way.  😊

There seems to be quite a few less than the first time we visited.
We spotted this one, which is quite a bit larger than the others, so obviously NOT from the same litter.

Now, we’re walking on the trail.
It starts where my bike broke down the other day.

We got to witness a hawk chasing an owl!  It all happened very fast!  No idea what an owl was doing out and about in the middle of the day.  So fun!!

This is the area where we spot the nutria. No luck today though. : (

Dinner was excellent (if I do say so myself).  It sounds spicy, but it’s not.  Unless you eat the shrimp by itself, which we’ve done in the past and served it over wild rice.

CAJUN FETTUCCINE ALFREDO

1 pound shrimp, peeled and deveined

8oz. uncooked fettuccine

1 T. butter

1 T. Cajun seasoning

2 cloves garlic, chopped

¼ C. dry white wine or chicken broth

1 C. heavy cream

1 C. parmesan cheese

¼ C. green onion (optional for garnish)

Start pasta.  Meanwhile, melt the butter in a pan over medium-high heat.  Toss the shrimp in 1 T. Cajun seasoning.  Add to pan and cook about 2-3 minutes per side.  Set aside.

Add garlic to the pan and sauté about 30 seconds.  Deglaze the pan with the wine. 

Add the heavy cream, parmesan.  Cook until it thickens a bit – about 3-5 minutes.

Drain the pasta, then add to the alfredo sauce, along with the shrimp.  Serve garnished with green onions if desired.

HINT:  For two, cut recipe in half.  Perfect for two with no leftovers.
