I don’t like pancakes. Never have. And at 58 years old, I was sure I never would. Not homemade, not McDonald’s. None.
Until this morning . . . .
He stood over me watching as I took my first bite. I felt like a food critic. I swear I heard a swell of music and an angelic choir as the revelation hit me . . . .
Blaine (with a tiny bit of help from me) made the BEST PANCAKES EVER!
They were so good, I actually ate FOUR! Blaine ate 5. That along with Pressler’s sausage (from a meat market in the Akron, Ohio area) made it the best breakfast I’ve ever had – – even better than the pecan waffles he makes. I would say this makes him the Breakfast King, but he doesn’t make anything else – at least not yet. 😊
Below is the recipe. It’s a little extra work, but well worth it! Enjoy!
1 1/2 C. flour
3 T. sugar
1 1/2 teaspoons baking powder
1 teaspoon salt
1 1/4 C. milk
2 eggs, SEPARATED
3 Tablespoons butter, melted
- In a medium bowl, whisk together the flour, sugar, baking powder and salt.
- In another bowl, whisk together the milk, egg YOLKS and melted butter.
- Pour the wet mixture into the dry and stir until just combined.
- Preheat a griddle (we used an electric skillet) over medium heat. Meanwhile, beat the egg WHITES into soft peaks with an electric mixer. (this is the part I helped with)
- Gently fold the whites into the batter.
- Grease the griddle (if necessary – we didn’t). Cook on one side until bubbles form and the pancakes are cooked around the edges and brown on the bottom – about 1 1/2 – 2 minutes. You may need to adjust the temperature, so I suggest doing a small test one first.
- Flip and cook through – about 1 minute more.
We got 11 pancakes out of this.
